Hello,
I think we can finally announce Spring is most definitely in the air... .... is it me or does everything and everyone seem brighter and happier this week?
I certainly do and I hope you do too. Along with the brighter weather its been good to see more people out and about, walking with friends and families enjoying the sunshine and fresh air. Something that is always good to do, I would like then to encourage you to rally family and friends to take part in the Welwyn Hatfield CRUK Race for Life event at Stanborough Park on Sunday
17th May . This iconic event is now just 10 weeks away, I am on stage again this year to take the warm up for both the 5km and Pretty Muddy events. We all know someone who has been affected by cancer, and the progress in finding a treatment for this devastating disease is becoming so advanced now, but it need continual funding to support it. You CAN help just be taking part , the link is in this newsletter, Thank you in anticipation of your support.
The Spring Reset preparation has started this week with another lovely group of participants, who along with myself will commence our 14 day fasting protocol from Monday. It really is the best time of year for a mind body Spring clean that we are all looking forward too.
Last week was the monthly weigh in for members of the new Lindsey Fitness Health & Wellbeing group. This group was
created following the huge success of the January You & Me Initiative. Its a proactive group for ongoing fitness and weight loss support. We share recipes, online exercise sessions and also have a ZOOM meeting once a month for a topical discussion and progress update. I am delighted and excited at how this has taken shape and is evolving for it's members.
Are you a green Goddess? I certainly
condider myself one when it comes to green vegetable intake. I don't consider a meal complete unless it contains something green.
Read this weeks Health Matters and I challenge you to up your intake over the coming weeks. You could start with the tasty Green Vegetable Stir Fry recipe in Food Matters this week.
Have a beautiful week, I'll see you in classes, online and at running club.

Health Matters>>>>
The Power of Green....
If you're like me, you're always on the lookout for ways to boost your health and energy. One of the easiest ways to do that? Adding more green vegetables to your diet. Not only are they packed
with nutrients, but they also add a burst of colour and flavour to your meals. Let's look into some of the best green veggies you should consider including in your healthy diet plan and why they benefit you.
SPINACH -This leafy green is a powerhouse of vitamins and minerals. It's rich in iron, which is essential for keeping your energy levels up. You can toss it in a salad, blend it into a smoothie or soup, or even sauté it for a quick side dish. Top of my shopping list every week.
BROCCOLI -
Broccoli is loaded with vitamin C, which is great for your immune system. Plus, it's got a high fibre content to keep your digestion on track. Try roasting it with a bit of olive oil and garlic for a delicious twist.
KALE - This green has been having its moment in the spotlight for a reason. It's packed with antioxidants and is incredibly versatile. You can make kale chips, add it to soups, or even use it as a base for a
hearty salad. Kale is one of those veggies that really gives you a bang for your buck in terms of nutrition.the Cavelo Nero variety is especially nutrient dense.
GREEN PEAS - Another favourite of mine. Sweet and tasty but also full of protein. They're perfect for adding to stir-fries, pastas, or even just as a simple side. Plus, they're a great option for those days when you need a quick and easy addition to your meal.
BRUSSELL SPROUTS -These mini
cabbages are often overlooked, but they're fantastic for your health. Roasting them brings out a natural sweetness that pairs well with a variety of dishes. They're high in vitamin K and C, and they help support bone health, as does cabbage in all it's forms.
ASPARAGUS - This elegant veggie is not just for fancy dinners. It's easy to prepare and pairs well with almost anything. Asparagus is a great source of folate and
vitamins A, C, and E. Grill it, steam it, or toss it in a salad for a nutritious boost.
There are of course many, many more to choose from all with health benefits, and eating a variety will be appreciated by your body. Make it a habit to try a different one each with along with your regualar intake of favourites.
I make it a rule to add something green to every meal I can and I make sure to always have a mixture of fresh and frozen green veg available for that..

FOOD MATTERS>>>>
Green Vegetable Stir-Fry - quick, it's easy, and it's packed with
goodness.
INGREDIENTS:
A bag of fresh baby spinach leaves
A couple of cups of broccoli florets
One green pepper
A handful of sugar snap peas
Two cloves of garlic
A small piece of
ginger
Two tablespoons of olive oil
Soy sauce or tamari for seasoning
A sprinkle of sesame seeds for a bit of crunch
INSTRUCTIONS:
Start by washing all your veggies thoroughly. We want to keep them fresh and crisp. Chop the broccoli into
bite-sized florets, slice the pepper into strips, and mince the garlic and ginger.
Heat the olive oil in a large pan over medium-high heat. Once it's shimmering, toss in the garlic and ginger. Let them sizzle for a minute, just enough to release that amazing aroma.
Next, add the broccoli and sugar snap peas to the pan. Stir them around for about 3-4
minutes.
Add the green pepper. Give everything a good stir. Let it cook for another 2 minutes.
Finally, add the spinach. It wilts quickly, so just stir it in until it's nicely mixed with the other veggies.
Now, for the seasoning. Drizzle a bit of soy sauce or tamari over the veggies. Stir well to coat
everything.
And there you have it! A beautiful, vibrant Green Vegetable Stir-Fry. Just sprinkle some sesame seeds on top before serving.
This dish is perfect on its own, or you can serve it with rice or noodles - ENJOY!
