Hello, A true feel of the start of Autumn this week, with such a mixture of weather sunny, rainy, blustery days. Shorter days with darker mornings and evenings have suddenly been realised too I think. Good news however from the participants, including myself, on the late Summer Reset - the results have been outstanding as you can read later in
this newsletter. The last Reset this year is planned for mid November, and places can be booked from October. September is also the traditional month of the Harvest Festival, so I have this week included a delicious soup recipe in Food Matters that embraces the season. This weeks spotlight is on a topic that we cannot fail to ignore. It seems to be in the news, on
television, in magazines. I think most of us will know of someone who is having them or has used them. I'm talking weight loss jabs, so I just wanted to put things in a balanced perspective from a health point of view. LATE SUMMER RESET RESULTS >>>>>
It may seem a little odd to be highlighting an article on weight loss jabs and Reset results in the same newsletter , but I couldn't wait to share the results of the last 3 weeks of a delicious healthy eating, intermittent fasting and activity programme - we are celebrating! that yes, lends itself to weight and inch loss but is much about empowering change.... for the better! Weight loss for the participants, including myself, on this Reset ranged from 7 - 13lbs! We are feeling energised, slimmer, trimmer and really have laid to rest a few niggling not so good habits. The enthusiasm and connection we had from the start really encouraged unity and working with each
other to help ourselves become our best versions. Some of the graduation day comments ... " Well, what a fabulous 3 weeks I’ve had! FOOD MATTERS>>>>>>>> Here's a recipe for a Harvest Festival Chunky Soup, perfect for celebrating the bounty of the season:
INGREDIENTS: - 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks,
sliced
- 1 large potato, peeled and diced
- 1 sweet potato, peeled and diced
- 1 cup butternut squash, peeled and diced
- 1 courgette, sliced
- 1 cup sweetcorn kernels (fresh, tinned or frozen)
- 1 cup green beans, trimmed and cut into 1-inch
pieces
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1/4 cup fresh parsley, chopped
INSTRUCTIONS: - Sauté Vegetables:
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
- Add Root Vegetables:
- Stir in the carrots, celery, potato, sweet potato, and butternut squash. Cook for about 5 minutes, stirring occasionally.
- Add Remaining Vegetables:
- Add the courgette, sweetcorn, green beans, and diced tomatoes to the pot. Stir to combine.
- Simmer Soup:
- Pour in the vegetable broth and add the thyme, rosemary, salt, and pepper. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the vegetables are tender.
- Add Beans:
- Stir in the cannellini beans and let the soup simmer for an additional 5 minutes to heat the beans through.
- Finish and Serve:
- Remove the pot from heat and stir in the fresh parsley. Adjust seasoning with additional salt and pepper if needed.
- Serve:
- Ladle the soup into bowls and serve hot. Enjoy! .
