Hello There, The Easter weekend approaches and I for one am glad to have the time to reflect on a recent rollercoaster of emotions.... from the grief of bereavement to the privilege of delivering a most beautiful and joyously happy wedding celebration. then the absolute terror of nearly losing Frank the Vizsla, all in the space of two weeks!!! I
would like to thank so many for the love ,many messages, flowers and hugs received and the understanding of members when I had to cancel classes at short notice. It helped so much in coping, as did having to focus on the Spring Reset which I am in the midst of, along with a lovely group of ladies. I am positive the mindfulness and nutritional discipline of the the Reset helped in part. Frank I am pleased to say progresses daily, and we are blessed to have our boy back and mending
when it could have all been so horribly different. The Mind Matters this week is how we can cope with these emotions, at times when we might be overwhelmed by them. My focus now is firmly on the London Marathon in just over a weeks time. I was much inspired last Sunday by LFRC member Natalie Kempster who completed the Paris Marathon in just under 6 hours (her 7th Marathon). I followed her progress on the event app willing her on all
the way, and can't wait to give her a hug and see the fantastic medal. You may not ever want to run a Marathon, but a 5km for a good cause is doable for most - and I am booked to take the warm up at the Welwyn Hatfield event in May and now entered for the St Albans event in July- Join me? Here's a healthy Easter lamb recipe that focuses on fresh herbs and simple ingredients to enhance the natural flavours of the lamb:
Herb-Crusted Roasted Lamb INGREDIENTS: - 1 boneless leg of lamb (about 4-5 pounds)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2
tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- Juice of 1 lemon
INSTRUCTIONS: - Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Herb Mixture: In a small bowl, combine the minced garlic, rosemary, thyme, parsley, Dijon mustard, olive oil, lemon juice, salt, and pepper. Mix well to form a paste.
- Season the Lamb: Pat the lamb dry with paper towels. Rub the herb mixture all over the lamb, ensuring
it is evenly coated.
- Roast the Lamb: Place the lamb on a roasting rack in a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium, as measured by a meat thermometer.
- Rest the Lamb: Remove the lamb from the oven and cover it loosely with aluminum foil. Allow it to
rest for about 15-20 minutes. This will help the juices redistribute, making the meat more tender.
- *Slice and Serve: Slice the lamb against the grain and serve with your choice of healthy sides, such as roasted vegetables or a fresh green salad.
TIPS: - Herbs: Feel free to experiment with other fresh herbs like mint or oregano for different
flavour profiles.
- Sides: Pair the lamb with whole grains like quinoa or lentils/puses
- Sauce: Consider serving with a light yoghurt sauce flavored with mint and cucumber for added freshness. ENJOY!

The ' Very Last One' !!!........1 week to go >>>> Oh goodness the final countdown has begun! With a very pleasant 8 mile run last Sunday I now have just a 10km Sunday run to go. I will visit the EXcel Centre in London next Friday with some of my LFRC
members to collect my official race number and final instructions for the big day! I am so excited for it now, especially after Marathon sister Natalie's incredible Paris Marathon last weekend. which I followed ever mile on the tracker, willing her forward to the finish line. so now the excitement mounts for what is renowned as the Worlds Greatest Marathon and I intend to run and enjoy every mile, hour, minute and second of
