Time out from our working lives gives time to spend relaxing and really appreciating the good things in our life. Taking time for yourself is important both mentally and physically, allowing you to 'reset and refocus' to cope with challenges

Here's a delicious recipe for Lamb and Vegetable Tagine: INGREDIENTS: - 2 lbs (900g) lamb shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
(optional)
- Salt and freshly ground black pepper to taste
- 2 cups (480ml) chicken or vegetable stock
- 1 can (14 oz/400g) diced tomatoes
- 2 tablespoons tomato paste
- 1 cup (150g) dried apricots, halved
- 2 carrots,
sliced
- 1 courgette, sliced
- 1 red pepper, chopped
- 1 cup (150g) chickpeas, drained and rinsed
- 1/2 cup (75g) almonds, toasted
- Fresh coriander or parsley, chopped for garnish
- Lemon wedges, for
serving
INSTRUCTIONS: Prepare the Lamb: Season the lamb cubes with salt and pepper. In a large tagine or heavy-bottomed pot, heat the olive oil over medium-high heat . Add the lamb in batches and brown on all sides. Remove and set aside Cook the
Aromatics: In the same pot, add the chopped onion and garlic. Sauté until the onion is soft and translucent. Add Spices: Stir in the cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Cook for about 1 minute until
fragrant. Combine Ingredients: Return the browned lamb to the pot. Add the stock, diced tomatoes, tomato paste, and dried apricots. Stir to combine. Simmer: Bring to a boil, then reduce the heat to
low. Cover and simmer for about 1.5 to 2 hours, or until the lamb is tender. Add Vegetables: Add the carrots, courgette, red pepper, and chickpeas to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender. Finish the Tagine: Taste and adjust seasoning with salt and pepper as needed. Stir in the toasted almonds. Serve: Garnish with chopped coriander or parsley. Serve hot with lemon wedges on the
side. Tips: - Serve the tagine with couscous, rice, or flatbread to soak up the delicious sauce.
- Feel free to substitute or add other vegetables like sweet potatoes or green beans according to your preference.- ENJOY!
TCS London Marathon Blog 2025 -
The ' Very Last One' !!!........5 weeks to go >>>> This weeks training was a little different as I was away with friends in lovely Norfolk. It involved 3 days of walking to some very beautiful places some 8/10 miles each day with our dogs. I have a 10 mile
training run planned for this Sunday ahead of the 22 mile distance the following week, the last big training run before the big day in London next month. If you follow me on Facebook you will see that donations have 'exploded' to nearly £1300 !!! A fundraising initiative from a fellow marathon runner, where I am sponsored for individual miles of the 26.2 marathon distance , boosted donations. I will now attempt to memorise who has sponsored which mile and use that to spur me on every step of the iconic route on April 27th - thank you to all those who took part - I am so very touched by your generosity .
The training and fund raising continues.... Fundraising for the Welwyn Hatfield Parkinson's Group is now heading towards £1300, at a fantastic £1291.00 (including cash donations) I can't thank you enough
