Hello There It was grey and a tad damp ... but it was a fantastic day in Newcastle last Sunday! Following classes last Saturday morning, Gary, Frank the Vizsla and I headed up to Newcastle for the iconic Great North Run. We were
royally hosted by lovely friend and Glow Northumberland Fitness Instructor Liz Wilson and her husband Scott. Our thanks to them for making the weekend such a treat. The GNR is officially the biggest Half Marathon event in the world and one I have always wanted to take part in. Having failed to get a place in the ballot, I took a charity place for the Meningitis Research Foundation in my bid to take part in this infamous event. So along with some
60,000 other we ran the 13.1 miles from Newcastle, over the Tyne bridge, out to the sea, then along the coast to finish in South Shields. The atmosphere was amazing, the spectators and entertainment along the way so loud and encouraging. The organisation of the event was new this year but worked a treat, and I was thrilled to finish in a better time than I expected of 2 Hours 4 minutes and 13 seconds considering how many were taking part. But more than that, and thanks to family, friends
and many of you I have managed to more than double my required fundraising target to almost £800 for the Meningitis Research Foundation. So a huge thank you for your messages of encouragement, support , kindness and generosity which enabled me to tick this event off my bucket list - Bring on the London Marathon 2025 !!! Do have a read of a glowing testimonial from one of my 121 clients Elaine Tombs this week. Working 121 is proving to be
a highly rewarding experience for both myself and the clients I work with, and I will be looking to take on more mentoring clients in October. I felt there may be a need for soup this week as the weather turns, and as its Harvest Festival time what better than a hearty vegetable soup. I love to hear any Autumnal recipes from you too. After being approached and encouraged earlier this year by a previous Lindsey Fitness Member I started 121 mentoring packages. This is something I take great pride in. There is something quite magical about working closely with someone who wants to change for the better but doesn't know where or how to start. I have been working with several clients in recent months and received this
wonderful testimonial last week from Elaine (pictured). Elaine has just completed a 6 week mentoring programme with me. A personal programme that was created between us to great effect. " Having always been a confident, active person, never overweight, I found myself in an 18 month pickle following a couple of injuries. I couldn't exercise at all and this affected my mental state, my weight, my bodyweight and my cholesterol
levels. Lindsey's newsletter hi-lighting her new 1-2-1 mentoring programme popped into my mailbox at just the right time and as I had worked with her before doing the Colour Code Resets, I didn't hesitate to get in touch. I was at a low ebb, disappointed in myself that my body wouldn't do what it was used to, telling myself I was weak. I just couldn't see a way back to exercise
because I felt such a failure at not being able to achieve the results I had enjoyed in the past. Week on week, Lindsey listened, cajoled, encouraged and came up with eating and exercise plans that suited me and also respected my body during it's healing process. We worked at my pace and my ability, even after the first session I felt my spirits lift because she taught me that at 66 years
old, I can still exercise, improve my body shape, and more importantly regain my positive mental well being and lower my cholesterol. Lindsey asked for an accountability post daily to say what I had eaten and what exercise I had done. This was a pleasure to do because Lindsey was always full of praise and encouragement and it made me feel like top of the class when she congratulated me. What a wonderful 6 weeks it has been, I can't express enough, the joy at finding exercise again. My cholesterol is back in the normal range, I am 7lbs lighter and 6.5 inches slimmer. The weight loss and inch loss are a surprising bonus of a process that has given me back something I thought I had lost forever. Lindsey has put me back on top of the world, it's been like holding hands with a best friend who

Harvest Festival Vegetable Soup: Use practically any veg you like, in any amount you like to make this hearty soup. Ideal to batch cook and freeze too - Olive Oil: Adds richness and depth of flavour to the soup. It helps to sauté the
onions and garlic, enhancing their natural sweetness and aroma. Additionally, it adds a smooth texture to the soup.
- Tomatoes: The star ingredient in the roasted tomato base of the soup. They have a meaty texture and a concentrated flavour, which intensifies when they are roasted. The roasted tomatoes provide a rich and robust taste.
- Onions: Bring a sweet, savory, aromatic
flavour to the soup. They are sautéed until soft and caramelised, adding a subtle depth and sweetness to the overall taste. Feel free to use leeks, or shallots.
- Garlic cloves: Add a pungent and slightly spicy flavor to the soup, enhancing the savory notes of the dish.
- Celery: Adds a refreshing and slightly bitter taste to the soup. Its crunchy texture and mild flavour
provide a subtle layer of complexity to the overall profile.
- Carrots: Contribute a gentle sweetness and vibrant colour to the soup. They provide a natural sweetness that balances the flavours of the other ingredients and adds a pleasant earthy note.
- Veggies: cauliflower, red pepper, or courgettes Feel free to use other veggies here ( parsnips, turnips, celery root,
potatoes, green beans, sweetcorn, sweet potatoes, chard, kale).
- Chickpeas: Provide a nutty and creamy texture to the soup. They add protein and substance, making the soup more filling and satisfying. Feel free to use another bean- white beans are nice too!
- Broth, chicken or veggie: Forms the flavourful liquid base of the soup. It adds depth, richness, and umami to the
overall taste. Chicken broth lends a savory note, while vegetable broth keeps the soup vegan-friendly.
- Sea salt and black pepper: Enhance the flavours of all the ingredients in the soup. They bring out the natural taste of each ingredient and contribute to a well-seasoned and balanced dish.
- Herbs: rosemary, sage and thyme provide an earthy and aromatic
flavour to the soup.
- Smoked Paprika: Infuses the soup with a smoky and slightly spicy flavour. It adds depth and complexity, enhancing the overall taste profile of the dish.

- INSTRUCTIONS:
- Step one: Lay the tomatoes skin side down, and cut side up on a lined baking pan. Drizzle lightly with olive oil and sprinkle with
sea salt. Roast for 30 minutes until tender wilted.
- Step two: While the tomatoes are roasting, get all the veggies and herbs prepped and chopped and put to one side.
- Step three: While tomatoes are roasting, sauté onions and garlic in a large soup pot for about 15-20 minutes over medium heat until soft and caramelised.
- Step four: Take half of the onion mixture and blend with 3 cups of broth and the roasted tomatoes.
- Step five: Blend until smooth.
- Step six: In the pot with the sauteed onions and garlic, add sage, rosemary, salt, pepper, paprika, celery, carrots, and cauliflower. Stir on low heat for a minute just to coat everything. Add 1 cup
of broth, bring to a boil, then simmer gently on low with the lid on for 15 minutes.
- Step seven: Add red pepper, courgette, chickpeas, and blended tomato broth. Simmer 20 minutes more. Test the vegetables for 'doneness'. Simmer longer if needed
- Taste and adjust salt to taste. Serve!
To garnish, drizzle with extra-virgin olive oil, a dollop of creme fraiche, yogurt or sour cream or a sprinkling of
parmesan .ENJOY!
