Hola! I can't deny sitting on a balcony in the Spanish sunshine writing this weeks newsletter is rather pleasant! I believe you are now experiencing some better weather at home too at last! Whist the weather is glorious here it is unseasonably a little windy which means the millpond seas we are used too are
not yet ideal for progressing our paddleboarding adventure with Frank the Vizsla! So t's a case of all the gear , and a little idea. Hopefully I will have better news on this next week before we return home. I have been running with Gary and Frank in the mornings, alternating this with revisiting and thoroughly enjoying some of the HiiT Sessions on replay in Lindsey Fitness Home HiiT. There will be LIVE HiiT and WalkFit mini sessions this Saturday from Spain for

FOOD MATTERS: Spinach & Goats Cheese Frittata
Ingredients3 tablespoons olive oil ½ medium onion, thinly sliced salt and black pepper 5 ounces baby spinach (about 6 cups) 10 large organic eggs, beaten 1 cup goat cheese, crumbled (4 ounces) 1 tablespoon white wine
vinegar 5 ounces mixed salad leaves (about 6 cups) DirectionsHeat oven to 400° F. Heat 1 tablespoon of the oil in a medium ovenproof nonstick frying pan over medium-high heat. Add the onion and ½ teaspoon each salt and pepper and cook, stirring occasionally, until golden brown, 3 to 4 minutes. Add the spinach and cook, tossing, until wilted, 1 to 2 minutes. Add the eggs and
sprinkle with the goat cheese. Cook until the mixture begins to set around the edges, 1 to 2 minutes. Transfer to the oven and bake until set, 10 to 12 minutes. Whisk together the vinegar, remaining 2 tablespoons of oil, and ¼ teaspoon each salt and pepper in a large bowl. Add the salad leaves and toss to combine then serve with the Frittata - (Can also be enjoyed cold) - ENJOY!
