Hi Firstly, my apologies...... for the cancelled classes on Monday and Tuesday evening this week due to circumstances beyond my control. I was so disappointed not to see you for our final Festive sessions at Presdales and Monks Walk to wish you a
Happy Christmas in person. The Wednesday class at Wodson Park ran as scheduled thankfully and well done as always for embracing our final workout of the year!!!! For Lindsey Fitness online members this Christmas there is a Walkfit & Hand Weights mini session - 1700 steps, 1.7 miles without leaving the room! Also a mini fast blast HiiT session and a Fitness Pilates Accumulator for using as much
as you like along with a huge library of other online workouts over the break. I'll certainly be out walking and running (with Frank the Vizsla) as I have the Welwyn half marathon event on the 7th January supporting our 2024 London Marathon from the Lindsey Fitness Running Club. It's always good to have a physical or practical focus for the other side of Christmas at this point to help keep any overeating and inactivity at bay. I am
happy to know many of my members feel the same by using the online library of workouts throughout the break and other that have signed up for the Reset are now sub consciously primed for eating sensibly and thoughtfully. For those not yet familiar with Janet Thomson's Colour Fast Reset there is an overview in this Newsletter and still a couple of places available to book. We start on January 8th for the 21 day programme which will leave
us cleansed , energised and trimmed up by the end of the month!!!! In Food Matters this week there's a traditional bubble and squeak recipe , just perfect for using up all those leftover veggies. Christmas is different for everyone of course, a time of celebration with family and friends , reflection, gratitude and optimism maybe, but also for some, remembrance of loved ones lost. In my role now as an Independent Celebrant I am sending my love to all those families I have had the privilege of serving this year, and am thinking of you.
Christmas, as families come together may also be a time when engagements are announced, wedding dates or special wedding anniversaries planned - as an Independent celebrant please know I would be honoured to create and deliver your special celebration or ceremony.

Our Traditional Christmas Walk took place last Sunday from Tewinbury Farm with members of the Lindsey Fitness Running Club and several 4 legged friends enjoying the Hertfordshire Countryside. Festive Hats and Jumpers made for a colourful 90 minute walk in the dry but slightly windy weather. We were reminded that last years walk took place in the
snow! Mince pies and treats for the dogs were welcome at the finish too. Lindsey Fitness Running Club group sessions recommence from Sunday 7th January 2024

Traditional Bubble and SqueakINGREDIENTS: - 2 cups boiled potatoes, mashed
- 2 cups cooked cabbage, brussel sprouts, leeks finely chopped (in fact any left over veg you choose)
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 cup cooked meat - optional (such as leftover roast beef, turkey, chicken .... bacon is also good), finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
INSTRUCTIONS: - In a large mixing bowl, combine the mashed potatoes, chopped vegetables, onion, garlic, and
cooked meat. Mix well until all the ingredients are evenly distributed.
- Season the mixture with salt and pepper according to your taste. Remember to go light on the salt if your cooked meat is already seasoned.
- In a large frying pan, melt the butter over medium heat. If desired, you can also add a tablespoon of vegetable oil to help with browning and prevent sticking.
- Once the butter is hot, add the potato mixture to the pan, spreading it evenly to form a thick
pancake-like shape. Press down gently with a spatula to compact the mixture.
- Allow the bubble and squeak to cook undisturbed for about 10-15 minutes or until the bottom is golden brown and crispy.
- Carefully flip the bubble and squeak using a spatula. If it breaks apart, don't worry; just reshape it in the pan.
- Cook the other side for an additional 10-15 minutes or until golden brown and crispy.
- Once both sides are crispy and the inside is heated through, remove
the bubble and squeak from the pan and transfer it to a serving plate.
- Cut the bubble and squeak into wedges or squares and serve hot as a side dish with your favorite accompaniments. It pairs well with fried eggs, good quality sausages, or even a dollop of tangy tomato chutney.
Note: Bubble and squeak is a versatile recipe, and you can customize it by adding other leftover vegetables or herbs to the mixture. It is traditionally made with
leftovers, so feel free to experiment and make it your own!
