I hope you are having a wonderful week as the weather warms up and we are set for another scorcher of a weekend according to the forecasts. Make sure to be sensible, applying adequate sun protection and keeping well hydrated with plenty of water. All day everyday please! It struck me this week that now the marathon and the wedding are over for me I really do need another goal to aim for. When we don't give ourselves something to strive for, we risk losing our confidence, our desire or 'mojo' if you like to achieve something good or better in our lives for ourselves. We talk ourselves out of something, putting it off...again! Consequently, it becomes harder and harder to get started on something. Whether it's a health, weight loss,
fitness, business or some other personal goal - it's important in the first instance to visualise yourself succeeding. To see yourself as already achieving what you want or indeed may need to and how absolutely fantastic that feels! Thus creating the absolute belief and desire to do just that. Whether your goal is big or small, or just step wise in the right direction, the desire to do so is key to achieving. Thus making failing a non
negotiable. At the running club last Sunday, after a lull in the longer marathon training runs it was so good to see runners stepping up to longer distances again to keep them up to speed for events coming up this Autumn. For me I know I needed an event to work towards so am now entered for the Windsor Half Marathon in September. I am already visualising running through the great
park and crossing the finish line in front of the castle at the top of the iconic long walk at Windsor - I'm excited already, bring on the training! So what is it YOU want to achieve, need to or want to do at this point in your life? - Because it starts right NOW, Health and well being should always be top of your list, because when you are the best version of you you are best placed for everything else in your life. FOOD MATTERS >>>> One Pan Spanish Chicken INGREDIENTS 1 tablespoons olive oil 450 gram boneless, skinless chicken breasts, cut into strips 250 gram smoked bacon, sliced 1 yellow pepper, chopped 1 tablespoons smoked paprika ½ teaspoon garlic granules ½ teaspoon oregano , , plus extra to serve ¼ teaspoon dried thyme ¼ teaspoon fennel seeds 2 tablespoons tomato purée 150 millilitre (¼ pint) water 400 gram tin chopped tomatoes Sea Salt and Black Pepper to season METHOD - 1. Heat the olive oil in a large frying pan set over a medium heat and fry the
chicken and bacon for 7-8 minutes, stirring occasionally, until the chicken has browned on all sides.
- 2. Add the yellow pepper, Smoked Paprika, Garlic Granules, Dried
Oregano, Dried Thyme and Fennel Seeds and stir well to coat the chicken. Cook for a further minute.

- 3. Add the tomato purée, water and chopped tomatoes and bring to the boil. Reduce
the heat and simmer for 5-8 minutes, or until the sauce has thickened. Season to taste.

- 4. Spoon into bowls, sprinkle with oregano, with green veg of your choice -
