What a perfect Spring Bank Holiday........I hope you enjoyed yours as much as I did! I spent the weekend in Norfolk for my Daughters Wedding, a truly magical event and the weather couldn't have been more perfect. Thank you for so many lovely messages before, during and after this much longed for
event!
I was however sad to have to miss the Welwyn Hatfield CRUK Race for Life weekend at Stanborough Park. It is the first time I have not been there to do the warm up sessions since it first started. I was thrilled however at members of both Lindsey Fitness and the Running Club took part to fly the flag in my absence - Fantastic!
Along with the fabulous weather over the Spring Bank
Holiday....thoughts for many now, including me turn to holidays. Whether at home of abroad, how are you feeling about yourself as we start going through drawers and wardrobes sorting Summer and holiday clothes - do you need also to sort out yourself and how you want to look and feel at this time of year?
The May Reset has recently finished, and I took part in this one too, with a wonderful group of participants. My reason for doing it was too get back to my regular Placebo Diet eating habits following the Marathon in April and to feel and look my very best version for my Daughters Wedding. The desire I felt to do and indeed be just that made it the simplest programme ever - I feel
amazing!
If you have not done a mentored Reset with me before - ITS A GAME CHANGER!. If you have, then you know how effective it is for you and how wonderful to include it as a regular part of your ongoing health regime. Working with the other participants on this mentored programme has again proved it worth, for the encouragement and support it elicits..... along with the results and good habits as you go forward. FOOD MATTERS >>>>
Salmon with Watercress Sauce
INGREDIENTS
90g watercress
a handful dill,
100g crème
fraîche
1 lemon, zested and juiced
black peppercorns,
ground to make ½ tsp
2 tbsp olive oil
sunflower oil
2 skin-on fillets salmon
a knob unsalted
butter
1 tbsp capers, drained
boiled new potatoes, to
serve
steamed green veg (such as long stemmed broccoli), to serve
METHOD
STEP 1
Put the watercress, most of the dill, all the crème fraîche, lemon juice and zest, black pepper, olive oil and a pinch of salt into a blender and whizz until a saucy, pourable consistency – add a tbsp of water if seems too thick. Chill while you cook the salmon.
STEP 2
Heat a non-stick frying pan over a mediumhigh heat. Coat the salmon fillets with a little sunflower oil and season generously. Put into the pan, skin-side down, for 2-3 minutes until the skin is golden and crisp. Carefully turn, then cook for 1-2 minutes before adding the butter and basting for another minute, adding the
capers and removing from the heat to rest for a minute.
STEP 3
Put the salmon and capers onto two plates, spoon over the watercress sauce and serve with new potatoes and green veg, if you like. ENJOY!
