Well, it's been pretty grey and rather damp this week, what ever happened to the Summer??? On a brighter note, the class timetable is back to normal and it's been a delight to teach some challenging but fun routines across the F2F classes this past week. I am always so excited
to teach the Saturday classes which are different every week providing an all round fitness workout. Cardio , strength and conditioning feature in both the HiiT and the Walkfit Classes. The formation work at Walkfit was particularly impressive this week and its also wonderful to see the improvements for us all (myself included) in upper body strength and tone with the weights section of this class. It's truly become such a fun and versatile
class and is proving popular with Lindsey Fitness members. The July Summer Resetters have now embarked on their transition week, with new , good and healthy habits firmly embedded. Bad habits have been changed for better ones over the last 3 weeks resulting in confidence in the ability to continue to be the best and healthiest version of themselves. Along with all the motivation now to continue has been the bonus default weight losses of
between 7.5lbs and 11lbs for each of them. So happy for and proud of them all but more than that they are happy and proud of themselves!! Especially with the abundance and variety of green summer vegetables to be found at this time of year. Green vegetables, such as spinach, kale, courgettes, and broccoli, offer numerous health benefits. Grilled Summer Vegetable SaladIngredients: - 2 courgettes, sliced lengthwise
- 2 yellow courgettes, sliced lengthwise
- 1 bunch asparagus, ends trimmed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion,
sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, torn
- 1/4 cup fresh mint leaves, torn
- 1/4 cup crumbled feta cheese (optional)
- Juice of 1 lemon
Instructions: - Preheat grill to medium-high heat.
- In a large bowl, toss courgettes, asparagus, red bell pepper, green bell pepper, and red onion with
olive oil, salt, and pepper.
- Grill the vegetables until tender and slightly charred, about 5-7 minutes per side. Remove from heat and let cool slightly.
- Cut the grilled vegetables into bite-sized pieces and transfer them back to the bowl.
- Add cherry tomatoes, basil, mint, and feta cheese (if using) to the bowl and gently toss to combine.
- Squeeze lemon juice over the salad and season with additional salt and pepper if needed.
- Serve the grilled summer
vegetable salad warm or at room temperature as a side dish or main course. ENJOY!
