It's almost Easter... which means the Cancer Research Race for Life events all over the country are imminent! If you have done it before then please do it again, there's a new 3km event to encourage first timers too along with a 30% discount for every entrant if you enter before April 30th . Volunteers to help out are also needed.

Just 24 days until the TCS London Marathon on Sunday 23rd April... and just one last long training run of 22 miles this Sunday before the big event. Lindsey Running Club members Marianne Lowne, Peter Aubusson and Susie Evershed along with myself are as ready physically
and mentally as we can be at this point for our marathons on the big day itself.. Our last long training run is planned and organised with car support and fellow runners from the running club kindly joining us along the route. It is such support that goes a long way to getting runners across that finish line. We are thrilled to be running with and supporting two other Isabel Hospice runners this Sunday too. Donations are still coming in for
Isabel Hospice, which is just marvellous, humbling and much appreciated all at the same time. most URGENTLY NEEDED this Year! Every two minutes, someone in the UK is diagnosed with cancer. Your support, through events like the Race for Life, is what helps CRUK continue their ground-breaking work to see more people surviving cancer. Cancer Research UK are world leaders in finding new ways to prevent, diagnose and treat cancer. CRUK receives no government funding for it's research. CRUK relies solely on the funds raised by fantastic people like YOU. The Race for Life is Cancer Research UK’s biggest series of fundraising events. Taking place across the UK, the events include for the first time this year a 3k event along with the usual 5k and10k routes for
participants to walk, jog or run, as well as the awesome Pretty Muddy obstacle events. Started over 25 years ago as a women-only event, Race for Life has grown into a series of hundreds of events across the country, raising nearly £500 million towards beating cancer over the last quarter of a century. In 2019, for the first time, the Race for Life opened its doors to men to
participate too, making it truly inclusive, and giving people the chance to come together with their family and friends, and join the movement to beat cancer. |
Joining the Race for Life really does help to create more tomorrows for more people. Lindsey Fitness has supported the Cancer Research UK Race for Life Events
for over 25 Years. This year I can't be at the Welwyn Hatfield event to do the warm ups but for the very best and only reason I would miss it - my Daughter gets married the same weekend! But I want to encourage you to be there whether for the first time, or taking part again. Your taking part truly makes a much needed difference - it really

I would of course like to help too ..In past years I have offered FREE
'training' on Sunday mornings with the Lindsey Fitness Running Club. The club was originally started just for this event all those years ago and has gone from strength to strength. from Power Walkers to Marathon Runners. On Sunday's from April 30th we are offering 4 weeks of training ahead of the Race for Life Weekend on 27th/28th May. If you are interested just to come and practice a 5km or 10km distance ahead of taking part in RFL please
get in touch. Simply Email lindseyfitness@btinternet.com . You will be made very welcome, supported and encouraged for your event - it's what we do and the offer is open to all. Saucy Chicken and Vegetables INGREDIENTS - 2 chicken breasts skin on
- 1 tbsp olive oil
- 200g new potato thinly sliced
- 500ml chicken stock
- 200g pack of mixed spring vegetables (broccoli, peas, broad beans and sliced
courgette) any veg really - make it as colourful as possible !
- 2 tbsp creme fraiche
- Handful Tarragon leaves, roughly
chopped
METHOD - STEP 1 Fry the chicken in the oil in a wide pan for 5 mins on each side. Throw in the potatoes and stir to coat. Pour over the chicken stock, cover and simmer for 10 mins until the potatoes are almost cooked through.
- STEP 2 Remove the lid and turn the heat to high. Boil the stock down until it just coats the bottom of the pan. Scatter the vegetables into the pan, cover again and cook the veg for about 3 mins.
- STEP 3 Stir in the crème fraîche to make a creamy sauce, season with pepper and salt, if you want, then add the tarragon. Serve straight from the pan...
