Hoorah.... the final long run training is DONE! 22 miles last Sunday in near perfect running conditions made for a comfortable run on a beautiful Spring Morning. It was such a pleasure to run with Jamie & Mark (pictured) also running the London Marathon for Isabel Hospice and LFRC Member Marianne Lowne running for the National Autistic Society this
year. A 6.30am start with a 2 mile warm up loop around Stanborough Lakes, then on to the Cole Green way via Howlands. Down into Hertford and along to Ware before returning back along the river, through Hertford, to the Cole Green Way. Finishing where we started less than 4 hours earlier at the Stanborough Beefeater, tired but empowered as we focus now on the London Marathon on April 23rd. We were as ever supported by other runners joining us at various
points along with our superb car and cycle support which always makes for a safe, effective and enjoyable run. Everyone felt very well looked after. Congratulations also to LFRC members Peters Aubusson and Jacqui Dixon who took part in the London Landmarks Half Marathon last Sunday too. Peter is also running the London Marathon this year, having qualified last year on his good for age time. Hos time on Sunday for the half a fantastic 2 hours 9 mins! As many of my members know I have a 'big' occasion coming up next month, my Daughter Kirrie gets married!!! It is an occasion as a Mother I have dreamed about since she was born. I want to therefore be the very 'best version of me' for her Wedding Day of course. Having missed my regular reset in March due to Marathon training I am so looking forward to

FOOD MATTERS>>> Salmon Fishcakes - 50g floury potatoes, cut into chunks
- 350g salmon (about 3 fillets)
- 2 tsp tomato ketchup
- 1 tsp English Mustard
- Zest 1/2 lemon, plus wedges to serve
- 1 heaped tsp chopped parsley
- 1 heaped tbsp chopped dill
- 3 tbsp plain flour
- 1 egg beaten
- 100g dried breadcrumb
- 4 tbspsunflower oilk
- salad, to serve
METHOD - Place 450g floury potatoes, cut into chunks, in a pan of water, bring to the boil, cover and cook for 12-15 mins until tender. Drain and leave to steam-dry, then mash.
- Meanwhile, season 350g salmon fillet and grill for 5-6 mins until just cooked. Cool for a few mins, then break into large flakes
- Mix the potato, 2 tsp tomato ketchup, 1 tsp English mustard, the zest of ½ lemon, 1 heaped tbsp chopped parsley, 1 heaped tbsp chopped dill and some seasoning. Lightly mix in the salmon, taking care not to break it up too much.
- Shape into 4 large fish cakes

- Put 3 tbsp plain flour, 1 beaten egg and 100g dried breadcrumbs in 3 shallow
dishes. Dip the cakes into the flour, dust off any excess, then dip in the egg, and finally coat in breadcrumbs.
- Heat 4 tbsp sunflower oil in a large pan. Fry the cakes over a medium-low heat for 3-4 mins each side until deep golden and heated through.
- Serve with salad and lemon wedges....ENJOY!
